There's nothing more satisfying than freshly baked goodies and this is one of them, more so it's made of simple ingredients, that's easy and quick to prepare. A wonderful breakfast treat for a great week. Smells so good too!!
Ingredients
1/2cup whole wheat flour
1/2cup bread flour
1cup cake flour
2tbsp chocolate powder
3pcs eggs, medium
100g unsalted butter
3tbsp sugar
3tbsp honey
1/2tsp baking soda
1/2tsp baking powder
1tsp cinnamon powder
1tsp vanilla
1/2tsp salt
Filling: raspberry and oatmeal

How to make?
Combine all ingredients, except raspberry and oatmeal.
Place the dough in parchment paper or plastic wrap. Form a log or cylinder for easy cutting.

Freeze overnight.
Cut about 1/4inch thick
1tsp filing between two pieces of raw cookies
Bake at 175C for 20minutes
When I make cookies, I just can't wait for them to cool down. You may enjoy it that way or at room temperature.

Gluten free chocolate banana oatmeal cookies
One of the quick and easy recipes that you can try. It's refined sugar free and you can adjust the sweetness using honey.
Ingredients
3pcs ripe banana
1pc egg
1tbsp chocolate powder
2tbsp oatmeal
1tbsp cashew nuts (cut into small pieces)
1tbsp powder milk
1tbsp honey
a pinch of salt
How to make?
Mix everything together.
In a baking sheet, scoop the dough to form into cookie using a spoon.
Bake at 175C for 20mins.
This is great for breakfast or quick snack.
You may serve warm, at room temperature, or even cold.
If you are not up to gluten free recipes, you may add 1-2tbsp of flour and with a little bit of baking powder.
